Scad fish, also known as Chinchard, is a flavorful fish with firm, slightly oily flesh — perfect for grilling. It stays juicy and tender while developing a crispy, golden skin.
Typical Preparation:
Whole cleaned fish, lightly scored
Marinated with olive oil, lemon juice, garlic, salt, pepper, paprika, cumin, parsley, and a touch of chili
Left to marinate for 30 to 60 minutes before grilling
Cooking Method:
Grilled over charcoal or on a grill pan for about 6–8 minutes on each side (depending on size)
